In most cases classes will be taught by the tutor named in the brochure/website on the dates stated.  We make every effort to make our programme as accurate as possible at the time of printing.  We do, however, reserve the right to make any changes that may be necessary.

 

In all of our cooking classes (unless specified otherwise), the tutor demonstrates the first night and will then discuss what ingredients students need to bring weekly. Students to supply own tea towels.

 

ASIAN COOKING (Budget)    J

Easy to follow and cost effective recipes.  Quick cooking with different flavours of Indian, Chinese and Malaysian foods.  Not to be missed if you want to introduce excitement to your table.

ASIAN COOKING: SOUTH EAST ASIAN FOODS FOR BEGINNERS

Suitable to anyone interested to learn Asian cooking culinary skills.  You will learn to prepare food from Vietnam, Burma, Thailand, Malaysia and Singapore – all based on basic cooking.  A bit of hard work but exciting.

BAKING FOR BEGINNERS      J

The smell of freshly baked slices, breads and cakes is simply irresistible. If you'd like to learn the basics of how to make your own - this is the course for you. We'll bake bikkies, brownies, cakes, meringues, scones, muffins, slices and bars and last, but not least, some no-fuss bread. Fill your bikkie and cake tins with home-baked goods and bask in the praise of everyone who gets a taste.

 CAJUN COOKING

An introduction to traditional Cajun Cooking “Momma’s” way. Add some style and heat to your cooking with the Cajun passion for food.  This course will cover an understanding of Cajun cooking and cuisine; menu planning and preparing various Cajun classics for all occasions.

ITALIAN COOKING

Learn how to prepare simple yet delicious Italian recipes mainly from the Naples and Rome area.  Learn how to prepare a full dinner with entrée, pasta, a main course and dessert.

Russian Cooking

Looking for more diversity in the kitchen?  This course invites you to experiment with new ways of using familiar ingredients and new recipes to delight your family and friends.  Learn how to make some popular Russian dishes from hors d’oeuvres and soups to delicious desserts, including borsch, beef stroganoff, pelmeni and piroskhi.

Learn the art of making flowers to adorn a special cake, for a lovely gift or just for fun.  This course will help you to become competent in making and handling flower paste, how to colour and dust sugar flowers; how to arrange a small posy or spray of sugar flowers.

CAKE DECORATION                J

Learn how to decorate a cake for a special occasion .The course will help you cover a cake in Sugar Paste (roll out icing) and decorate it. Students will be taught how to cover a cake. Decorate a cake with sugar flowers, brush embroidery marzipan fingers and lots more. Make Royal icing; Paper icing bags. How to pipe shells and write in icing on a cake. We will work on dummy cakes, and cake boards at times as well as a Fruit cake and a sponge cake. Material costs approx $25

Would you like to learn the specifics of meals without meat, eggs and diary products? You want to know how to cook vegan meals without the use of ingredients derived from animals?  You want to know how to read labels and what to look out for when buying food for vegetarians /vegans?  Then this is the course for you. In this course, you will also learn to prepare some baked goods without butter and eggs, how to read food labels and which animals hide behind some of those ominous numbers.  Bring small containers to take home leftovers.
